Comfort Food Recipe: Ratatouille

Remember in the Pixar film “Ratatouille” where food critic Anton Ego takes a taste of a restaurant’s vegetarian dish and is transported back into the past? To the food affectionately prepared for him by his mother?

There’s a reason why Ratatouille evokes so much emotion. It’s a simple dish but is extremely comforting. Also, it’s a great way to get some veggies into your diet.

What is Ratatouille exactly?

Ratatouille, pronounced rat-at-TOO-ee, is a dish that arose in the Nice region and has since spread across southeastern France.

It is a traditional Provençal stew made with slow-cooked tomatoes, onions, eggplant, zucchini, garlic, bell peppers, onions, tomatoes, zucchini, eggplant, bell peppers, and garlic. (According to epicurious.com)

Marjoram, basil, fennel and thyme are some of the more popular seasonings on the dish; it can be eaten as a side dish or as a healthy main dish. Having it with some rice or even another grain of your choosing for a meatless meal.

Recipe:

  • Heat some olive oil in a 4-quart Dutch oven or even a skillet over moderate flame.
  • Cook chopped garlic and onion for around 5 minutes, stirring often.
  • Stir in the chopped eggplant and peppers until it is well combined.
  • Cover and cook, for 10 minutes stirring regularly to avoid the vegetables sticking together. 
  • Mix in the tomatoes, zucchini, and herbs thoroughly. 
  • Cover and cook for around 15 minutes over low flame, till the eggplant is tender
  • Serve hot and enjoy!
